One pot meals are always one of my favorite ways to cook; they're easy to clean up and often take all day to cook which means all the flavors can blend together in perfect harmony--just like in this recipe!
Brisket usually takes a while to cook, which is fine! Just make sure your fire is going all day and you’ll have perfect, fork-tender brisket with potatoes, carrots, and onion just in time for dinner!
1 brisket, sized to feed your family
3 lbs potatoes, chunked (any kind will do!)
1 medium onion, chunked
4 carrots, peeled and chunked
4 c beef broth
½ cup red wine
2 bay leaves
Salt and pepper to taste
Large cast iron pot
Generously salt and pepper your brisket. Allow the grill to get hot and then char your brisket. Set aside. Warm the cast iron pan and place the brisket in with the onions, potatoes and carrots surrounding it. Add your wine, broth and bay leaves. Cover with foil and cook for approximately 4-6 hours or until the brisket is tender.
