Who doesn’t love a good sausage sandwich, topped with grilled peppers and onions? It’s so simple and so tasty, you just can’t go wrong with it! Follow this recipe to add a little flare to your sausage and pepper sandwiches!
Grilled Sausage Sandwiches
Yield: 4 servings
- 4 mild or hot Italian sausages
- 4 sub sandwich buns
- 1 medium Spanish onion
- 1 red bell pepper
- 1 yellow bell pepper
- 1 c shredded mozzarella or provolone
- 2tbl oil
- Salt and pepper to taste
- Cutting board
- Grill grate
- Tin foil
Using the tongs, carefully hold each pepper over the open fire until the skin is blackened and peeling. Wrap the peppers in tin foil and set aside.
Slice onion into ¼ inch rings and brush with oil and sprinkle with salt and pepper. Heat grill grate over fire. Grill sausages until done. Grill onions until soft and pull apart into rings (you can also cut the rings in half). Open tin foil and peel the blackened skin off the peppers. Deseed and cut into strips and toss with the onions.
Place sausage into the bun and top with cheese and pepper and onion mix. Enjoy!
